Okay, it’s a Saturday, you’ve had a rough week of exams and shitload of class work, and you just want to sit at halls and make yourself something worth eating. Luckily for you, I have just the plan for that. It all starts with you buying this list of ingredients:

  • Red onions (1)
  • White mushrooms (3 or 4)
  • Baby potatoes (5 or 6)
  • Chicken thighs (2/prs)
  • Soy sauce (1/4 cup)
  • Spring onions (1 medium stem)
  • Chives (6 stems)
  • Honey (1/4 cup)
  • Ginger powder (2 pinches)
  • Chipotle chilli flakes (or any hot powder) (2 pinches)
  • Dried coriander (1 pinch)
  • Garlic cloves (3)
  • Salt
  • Vegetable oil
  • Black pepper

Star by chopping the onion into medium wings, and crushing the garlic cloves with the tip of the knife (by applying pressure with your palm, having the knife laying flat on the clove). Chop the spring onion and the chives into thin pieces, and put aside for later. Chop the potatoes in half, and the mushrooms into medium sized pieces. Grease an oven tray with the oil, and on one side, put the potatoes and the onions. Season them with salt and pepper. On the other side, lay down the chicken, and season with salt and pepper. In a small glass, mix the soy sauce, honey, coriander, spring onions, chives, chilli flakes, and 2 tsp of olive oil. mix them well and pour them on top of everything in the oven tray, and put the mushrooms on top. Put everything in the oven at 180 C, for 20 to 25 minutes.

Voila, you can now feel like you’ve done something productive.
